Butternut Squash Bisque
Last night I made one of my favorite fall soups: Butternut Squash Bisque.
The recipe is adapted from "The Whole Food Cookbook" that I purchased a few years ago. This is one of my favorite cookbooks b/c it contains accesible recipes that can be made on a weeknight. It also emphasizes healthy choices and the use of unique/healthy ingredients.
Recipe:
2 to 3 lb butternut squash, peeled, and cut into 1 inch cubes.
1 Onion - Chopped
4 Carrots - Peeled and Chopped
1 inch piece of Fresh Ginger Minced
Saute in a large stockpot with EVOO for about 5 minutes.
Add 2 quarts of stock or water. Bring to a boil and let simmer for 40 minutes. Add a bunch of chopped parsley and puree' with a stick blender. Add fresh ground nutmeg, salt and pepper to taste.
I also added a little hickory smoked salt for more depth of flavor.

Wish List
Sorry I haven't posted in a while. Work has been crazy lately, but today I have some free time so why not do something fun. In an effort to ease boredom I have decided to create a Christmas wish list for myself. Here goes...

Jacksonville
A fellow blogger out there, Jacksonville Reviews, posted her new review of a restaurant called Taverna in San Marco.
I can't wait to visit with friends. We are going out of town this weekend (our Chicago trip) but when we get back we HAVE TO VISIT!
Once I finalize the Chicago trip plans I will be posting them here on the blog. I will also be posting a full trip report once we get back.
I recently discovered an awesome website chow.com. I am sure EVERYONE else out there already knows about it, but I didn't. They have tons of Chicago message boards to take advantage of. They also have boards for many other places. Check it out if you plan on traveling anytime soon and are an obsessive foodie like I am.
